The vegetable-growing project bringing freshness, intense flavours and variety to the Taufers kitchen.
A good dozen Taufers restaurants are bringing pure nature to their tables. Together they are growing over three hundred varieties of vegetables, from the traditional to ancient, local and rare varieties, harvesting them together and turning them into delicious soups, main meals, sides and desserts. Flowers are included too: for plant variety, insects and decoration.
The growing location is just outside of Sand in Taufers and is farmed 100 per cent naturally, in mixed cultivation and taking into account plant communities. Through the pure, near-natural method of cultivation it is possible to prepare delicious food from every part of the vegetable: for example, using a radish leaf for pesto or salad, as well as pea shoots, beetroot leaves, kale roots and much more.
